Publisher's Review
Vegan cafe… what’s the difference?
The first is the difference in materials.
Vegan cafes do not use animal ingredients.
We do not handle milk, cheese, butter, processed meats, etc. at all.
We put a lot of effort into selecting ingredients because we have to carefully check whether all the ingredients are vegan.
So, the biggest difference is that we create menus with good, healthy ingredients, and we know and enjoy them.

There should be no prejudice when it comes to taste.

Regardless of whether you are vegan or non-vegan, the menu must be ‘healthy and delicious.’
Everything from drinks to brunch and desserts should be vegan, but the 'vegan cafe menu' should also be delicious.
Instead of using dairy products, we find and combine alternative ingredients to create variations that taste just as good.
You can make a delicious latte without milk, using only soy milk and coconut milk.

Stick to the basics instead of flashy ones.

Another characteristic of vegan cafe menus is that they pursue visuals that are not too flashy.
We pursue a natural, simple visual.
Sticking to basic flavors rather than flashy decorations is also key to vegan cafe menus.

Here, in one book, 『Cafe Vegan Menu 101』, we have compiled the essence of all cafe vegan menus.
Chef Tae-seok Choi of the vegan baking cafe Kkotsamiro, who is vegan himself and has been baking vegan for about 33 years, has published his life recipes in a book.
