Above all, it is a 'wellness recipe book' that combines the advantages of a health book and a cookbook, and it provides detailed information on 'carbohydrates and blood sugar that you must know for slow aging', such as self-checking your blood sugar, carbohydrates in vegetables that you have been curious about, carbohydrate intake according to estimated daily energy needs, sugar and dietary fiber intake, and the problems of blood sugar spikes.


This book takes into account the advantages of the DASH diet, a high blood pressure treatment diet that has recently gained attention in Korea and the Mediterranean diet, which focuses on the intake of good fats such as olive oil, while also considering the problems of Koreans' long-standing eating habits regarding rice and the trend of high-sugar, high-carbohydrate foods.
Above all, we focused on the intake of 'dietary fiber', a key nutrient for blood sugar management, and in order to approach the legitimacy and necessity of this book from a more objective perspective, we added the advantages of the 'ketogenic diet', an epilepsy treatment diet developed in the United States, with the help of a consulting doctor.


As the number of patients with blood sugar-related diseases increases year after year, terms like blood sugar spikes, carbohydrate-restricted diets, and slow aging become more familiar. In this reality, "Low-Carb Kimbap" presents a new, efficient recipe that we need now.
In fact, before writing this book, the author repeatedly emphasized the necessity of a balanced nutritional intake for blood sugar management, and ultimately realized that the appearance of food is important.
It was only after recalling the recipe for 'Kimbap', which is familiar and easy to use for everyone, that I developed the food presented in this book, 'Low-Carb Kimbap'.

In particular, in order to directly find the answer to the question, "Why should kimbap be the one meal for blood sugar management?", I opened up several of the "low-carb kimbap" recipes I developed three years before the book was published on Naver and YouTube.
Even though it wasn't a recipe from a famous influencer with a large influencer base, we were able to observe an encouraging response as the recipe naturally spread to the public. After making improvements according to the public's needs, we completed the current 'slow-aging carbohydrate-restricted diet', 《Low-Carb Kimbap》.
