Into the book
Don't worry if you don't have the vegetables listed in the recipe ingredients; just substitute them whenever you need them.
For example, if you don't have bok choy, substitute with spinach, and if you don't have spinach, substitute with bok choy or arugula.
Or, if you have one or more other vegetables, you can leave them out.
Don't get too hung up on the vegetables in this book; feel free to substitute them with whatever vegetables you have at home.
However, check the ingredient compatibility and cook using vegetables you have at home.
The same goes for protein foods such as meat and fish.
