Publisher's Review
The truth about modern food, told with a good conscience by an analytical chemist who boldly says, “Enzymes are sugar water,” even on TV appearances.

The author of this book is a professor at a national university with a doctorate in analytical chemistry. He is also the head of the Korea Institute of Analytical Technology, which investigates the components of various foods, including soil, agricultural and marine products, and industrial products.
In 2009, I lost my beloved daughter to cancer. I spent three years researching and investigating the lifestyles and diet of cancer patients, and gave lectures at home and abroad. This led me to compile the stories I experienced into a book.
This book emphasizes the importance of healthy eating and good eating habits in everyday life.
In addition to giving lectures, he has also appeared on numerous terrestrial and cable broadcasts, actively giving lectures on young people's eating habits and stress relief. Recently, he has been actively broadcasting on KBS1TV's [Morning Plaza], [Lecture 100 Degrees Celsius], MBN TV's [Golden Egg], [The King of Thumbs], and MBC Radio's [Son Seok-hee's Focus].
Broadcaster Lee Geum-hee is well-introducing the touching content that goes beyond the health book written by a scientist.

"It contains the heart of a father.
Contains research by scholars who majored in natural science.
I want to put a faithful book, filled with sincerity and expertise, into the hands of those who are suffering from poor health."

This is how the Taecho Food School began.

The book begins with two stories that capture the reader's attention.
In order, “Thank you” comes first, but I will first introduce the part that explains well the motivation and purpose of writing this book.

One cold winter day in February 2006, while I was attending an academic conference in Germany, I received a phone call from Korea in the middle of the night.
And after that, my whole life and my family's life changed completely.

The phone conversation at the time was as follows.
My 22-year-old daughter had a very simple surgery to remove a small benign lump in her breast, but after the surgery, a tissue biopsy revealed cancerous cells.
I canceled all my academic schedules and rushed back to Korea, and that's when my daughter's illness began.

The time of pain and suffering that all cancer patients experience has come to us as well.
I cannot express in words how I felt when I looked at my daughter, who was so exhausted after vomiting water and her whole body felt like a ball of fire during chemotherapy and radiation treatment.
As I watched my daughter suffer without being able to do anything, I began to gather information about all the different types of cancer in the world.
The Internet was overflowing with functional foods that claimed to be effective against cancer, and I received recommendations from acquaintances for even the smallest details, from foods to commercial products and even methods that were said to be good for cancer.
Among them, there were those who maliciously tried to exploit cancer commercially.
But a drowning person will want to grab onto even a straw.
Probably all families of cancer patients feel the same way.

This was the first trial and error.
Because of the vague hope and anxiety that the rag I was holding onto might be the panacea, I lost track of what was truly important and wasted time and money, swayed by information of unknown origin.
And this trial and error is still repeated by most cancer patients and their families.
Because I was like that too.

After going through so many trials and errors, we were happy to have emerged from the tunnel of pain after completing chemotherapy and radiation therapy.
My daughter's appearance was the same as before when she was healthy.
The hair that had fallen out during the chemotherapy treatment began to grow back, and I believed that everything was back to normal.

My daughter, who had regained peace, returned to school in Seoul, determined to graduate, and once again stayed up all night, overworked herself, and tried her best to make up for the time she had lost while battling her illness.
And a year later, my daughter finally got the graduation cap she so desperately wanted, but she started fighting cancer again, with cancer cells spreading throughout her lungs, brain, and body.
During chemotherapy and radiation therapy, not only are cancer cells destroyed, but many normal cells, including immune cells, are also destroyed, causing confusion in the immune system.

Unfortunately, this was the second trial and error I had experienced.
I returned to my original life without any time or mental rest to recover my weakened immune system.
Cancer clearly has a cause.
If you go out into the world without properly finding the cause, the result will obviously be back to square one.
Even now, many patients may believe they have been cured and return to their old lives, making the same mistakes and returning to square one.
So how should I live? How should I live so that my weakened body can recover to the health it had before cancer? This question filled me with unbearable pain and guilt, and I began studying even harder than when I first received my cancer diagnosis.

The difference from then was that now I was researching and collecting information on my own.
At the time of the initial diagnosis, I felt relieved that it was still in the early stages of breast cancer, but after the recurrence, I was only worried and anxious because it had metastasized to dozens of places in my body, including my lungs and brain.
From then on, I began researching hospitals and references renowned for their cancer treatment around the world. I collected and evaluated data on cancer treatment cases and studies from renowned cancer treatment hospitals such as MD Anderson Hospital and Mayo Clinic, as well as domestic and European hospitals, to see if they could be applied to my daughter.

In addition, Germany and Japan have a very rich research and clinical cases on alternative medicine or integrative medicine in cancer treatment compared to other countries, so we collected and reviewed a lot of data.
We also learned about folk remedies used in the United States, Mexico, South America, and other countries.
Because I really wanted to believe that there was a way for anything on Earth to work for my beloved daughter.

I was in a hurry.
So I was just trying to find a real panacea, a cure.
But the more I learned, the more it became clear that there was no such prescription, and so my hopes began to fade.
As time passed and knowledge about cancer increased, the previously blurred picture began to fall into place, piece by piece, like a jigsaw puzzle, and a more complete picture of cancer development and treatment began to emerge.

But the daughter couldn't wait until the puzzle was put together.
On an autumn day when the sky was unusually high and blue, she left for the sky, leaving behind the words, “Thank you.”

In the process of researching and reviewing countless resources on cancer, I discovered some unfortunate facts.
Over the past 30 years, cancer treatment technology has advanced remarkably in Korea and around the world.
Targeted therapies and anticancer drugs with fewer side effects have been developed and commercialized by large pharmaceutical companies.
Also, the surgical techniques for operating on cancerous areas and the testing methods for early diagnosis of cancer are beyond imagination.
In addition, the number of cancer specialty hospitals has increased exponentially, modernizing cancer treatment facilities.
Also, in any country, cancer specialists who claim to be able to cure or properly treat cancer are starting to receive a lot of attention in the media and broadcasting.

But why is the number of cancer patients, not decreasing, but increasing exponentially, not only in Korea but also around the world? Why are so many cancer hospitals overcrowded but understaffed? Why must a single oncologist treat dozens of cancer patients a day? Must the fate of cancer patients be determined in such a short period of time and mechanical care? Why must cancer patients who have completed standard treatment return home, without consistent hospital supervision, simply endure a deluge of information and grueling trial and error? Can't young people, who might become cancer patients in five, ten, or even the future, avoid this suffering in advance? Is cancer prevention truly impossible? Is there truly no preventative method to protect myself and my family from cancer?

In the fall of 2009, I buried my beloved daughter deep in my heart.
After that, I decided to spend the rest of my life trying to answer the question my daughter left me.

That is how the ‘Taecho Food School’ began.
The Taecho Food School is just the beginning.
Although it is not perfect at present, it is a place that restores peace and confidence to many people.
[Text pages 12-17]

To all those who live with yesterdays they long to return to, painful todays, and uncertain tomorrows.
I hope it gives you hope and courage.

"thank you."

A word I never forgot amidst the pain of countless needle pricks.

A word said with a smile to a nurse who was flustered and couldn't find the vein.

“I’m sorry,” he whispered to me as I was getting angry at him for not eating more.

Words that made us laugh while dancing the dog dance, hiding the pain.

Even though he couldn't control his entire body properly, he repeated the words in a thin but clear voice.

The words he spat out one by one as if trying to comfort me as I cried out to him to please open my eyes.

The words he whispered as he took his last breath under my artificial respiration.

Her last words, left in my loving arms, as she wrapped up her extremely difficult and challenging struggle with illness, asking me to live happily for her share of the life.

My beloved daughter, who gave me only joy from the first day of her life to the last.

Her last words as she died in her father's arms after a short but brilliant life of 25 years.

"thank you."
Even in the midst of countless pains at every moment, she never forgot to confess her feelings to everyone who knew her.

“Thank you, God.”

3am.
I always wake up once or twice at similar times.
And then, try to fall asleep without thinking about anything.
But as always, the longing hidden inside me just won't go away.

The sleeping child covers his mouth and holds his breath to hold back his tears, afraid that his mother will hear, but it doesn't work as he wants.

“God, are you taking good care of our author?”
My tears finally give way only after I confirm my daughter's well-being through prayer.

25 years old.
A child who had so much to do, both by my side and in the world.

My beloved daughter, Lee Ji-eun, for whom I would not mind giving up my all.

The author's last words to the world
“Thank you, God.”
It may not resonate with some people.
But the author loved God more than anyone else and was truly grateful for everything He had given him in life.
That gratitude was a confession to Him who is the Absolute, but it was also a message left to all of us who remain.

The author was diagnosed with early-stage breast cancer while in college.
At that time, after successfully completing surgery, chemotherapy, and radiation therapy, I was able to return to the world with a joyful heart.
And then, I returned to the industrial design department as a 4th year student and devoted myself to my work to graduate with my friends, and I graduated without a hitch.

However, he returned to his original life and graduated without giving his weakened immune system time to recover from various medications and treatments, and the cancer recurred and spread throughout his body, ending his short life.

"thank you."
These words may have been the only strength and painkiller that allowed the author to endure.
And it is also a homework left for mom and dad who are by his side.

This book is the homework she left me.

Cancer patients are still repeating the same trial and error as her even today.
Is there no way to give them peace and confidence as they wander the world today, searching for good things amidst the overwhelming flood of information after completing standard treatment (surgery, chemotherapy, radiation therapy) at the hospital?

And how can we teach our beloved sons and daughters, those in their teens and twenties, who could face serious suffering in five, ten, or twenty years, how to avoid the immense pain and suffering they will face in the future? Thinking about the pain and suffering they might face in the future, my heart aches and I often can't sleep at night.
I feel sorry….

I hope that even just one person among the countless people who are lost and wandering will find relief from their suffering through this book.

That is the last homework my daughter Ji-eun left me.
