There are many restaurants throughout the city that have preserved their flavors and traditions for a long time, and there are also countless regular restaurants known only to locals.
That means every time you travel to Japan, there are plenty of restaurants to visit and opportunities to discover new flavors.
"Encyclopedia of Local Japanese Restaurants" carefully selects and introduces must-visit restaurants for travelers among the numerous old restaurants.


The author personally visited over 3,000 long-established restaurants across Japan over a period of six years.
Among them, we have carefully selected only restaurants with over 100 years of history, unique flavors, and a unique atmosphere.
It contains a wide range of dishes, from representative Japanese dishes such as sushi, soba, ramen, and udon, to Western and Chinese dishes, which are popular among locals.

The signature menu item, 'Omelet Rice', was created in 1925, the third year after the company's founding.
When Mr. Kitahashi saw a regular customer with a weak stomach always ordering an omelet and white rice, he felt sorry for her eating the same thing over and over again, so he gave her a creative dish of ketchup rice wrapped in a thinly fried egg.
It is said that the origin of this dish came from an impromptu reply when a customer asked for the name of the dish, saying, “How about combining an omelet and rice and making ‘omelet rice’?”
Since then, Hokkyokusei's omelet rice has spread throughout the country and has become a representative Western dish of Japan.

The key to the taste is the egg noodles that have been made by stepping on them by hand for four generations, and the secret aged seasoning that has been added to and aged without discarding since the restaurant was founded.
Because the dishes are generally brown due to the aged seasoning, the restaurant's website once featured a humorous message: "It's all brown, so what?"

Yamanashi Prefecture is a landlocked region, known as a "prefecture without a sea," but it boasts one of the highest numbers of sushi restaurants per capita in the country, and is also famous for its regional preference for sushi.
In the past, sushi culture also developed independently because it was difficult to obtain fresh fish.

The style is called 'Goshunigiri (Goshu Sushi)'.
It is characterized by being made into rather large pieces of sushi and being covered in a sweet soy sauce called nikiri-dare.
There are several shops where you can taste this 'goshunigiri', but Uoyasu is known locally as the originator, and is the long-established shop that is most often mentioned when talking about Uoyasu goshunigiri.
