Carbohydrate Handbook
Description
Book Introduction
A healthy and enjoyable diet that starts with a book
Due to changes in social structure and eating habits, obesity and its derived metabolic diseases such as hypertension, type 2 diabetes, and heart disease are on the rise.
In fact, the World Health Organization (WHO) has defined obesity as a new epidemic of the 21st century and has recommended measures to control obesity, such as 'banning the sale of carbonated drinks in schools' and 'imposing a sugar tax'.
Meanwhile, in Korea, there was a time when diets that sought quick results, mainly for cosmetic purposes, were popular. However, as the side effects of extreme short-term diets became known through the media, many people are seeking diet methods that pursue health rather than beauty.
Author Minwoo Bang, who is currently the director of Daithan Hospital, emphasizes that it is important to control your diet healthily and consistently, regardless of your purpose. He suggests a 'carbohydrate control diet' as a dietary method that can free you from the feeling of deprivation from not being able to eat food, the stress of calorie restriction, the side effects of extreme and short-term diets, and the painful psychological mechanisms of dieting.

Into the book
When you think of dieting, what comes to mind first? Most people probably think of extreme, painful dieting methods (calorie control) aimed at losing weight quickly.
What I felt while talking to many patients struggling with obesity at the hospital was the desperation with which they now wanted to 'please' stop dieting.
Their desperation led them to starve themselves every evening, or even three meals a day, torturing their precious bodies to the utmost.
Or it made them adopt extreme diets, such as eating only fruit or only salad all day.
There was an OECD forecast that the number of obese people in our country would double from the current level by 2030.
It is ironic that the current health trend is moving from wellness to wellness, yet the obese population is expected to increase even more significantly with the abundance of food.
Many experts still attribute obesity to the consumption of high-fat, high-calorie foods and lack of exercise.
Just as a doctor needs to perform a thorough examination to provide effective treatment, you need to understand the cause of obesity to find a solution.
We need to check whether the existing story is true and whether our diet is going in the right direction.
In my previously published book, “Carbohydrate Control Project - Ketogenic Diet,” I introduced a carbohydrate control diet method that is different from existing diet methods.
This is a story about changing existing common sense and prejudices about food and putting them into practice in your diet to maintain appropriate blood sugar levels through carbohydrate control.
In fact, “cholesterol and fat (oil) are unconditionally bad.
Or, incorrect nutritional knowledge such as “You should stay away from it” or “Rice is a healthy medicine” are making our bodies sick.
In addition, we would like to inform you that the widely known low-carb, high-fat, carbohydrate-based diet, and diet methods that restrict carbohydrates and consume meat and oil are not the same as the carbohydrate control diet.
To put it simply, carbohydrates are also found in apples, which are synonymous with healthy fruits.
Carbohydrate control does not mean restricting dietary fiber, while carbohydrate exclusion means excluding dietary fiber as well.
For reference, dietary fiber, like protein and fat, plays a role in slowing the rise in blood sugar levels.
The importance of carbohydrate control cannot be overemphasized.
It has been revealed that not only obesity but also various diseases such as diabetes, Alzheimer's, and atopy are related to 'carbohydrate control = blood sugar control'.
Although the book, "Carbohydrate Control Project - Ketogenic Diet," provides a detailed medical introduction to understanding "carbohydrates" and their effects in the body, I still felt that there was a lack of professional advice on practical methods for everyday life.
We had to address the concerns of readers who felt there was no specialized book that could be used to refer to what ingredients to buy at the market for dinner tonight or what kind of meal to prepare.
I believe that providing guidance on the amount of sugar in each ingredient and food, tailored to our country's circumstances, is the completion of the "Carbohydrate Control Project."
I hope this will be of great help to readers.

Publisher's Review
Author Minwoo Bang, who is currently the director of Daithan Hospital, emphasizes that it is important to control your diet healthily and consistently, regardless of your purpose. He suggests a 'carbohydrate control diet' as a dietary method that can free you from the feeling of deprivation from not being able to eat food, the stress of calorie restriction, the side effects of extreme and short-term diets, and the painful psychological mechanisms of dieting.
If author Bang Min-woo's previous work, "Carbohydrate Control Project," explained the theoretical basis of a healthy and enjoyable diet based on "carbohydrate control" rather than "calorie restriction," this book, "Carbohydrate Handbook," is characterized by its ability to convey the concept of the nutrient called carbohydrate, the types of carbohydrate control meals that are right for you, minerals that help with diet control, food ingredients containing vitamins, and the effects of MCT oil, all in a book that is conveniently portable and fits in the palm of your hand, for those who want to actually practice a carbohydrate control diet.
In addition, the book clearly describes not only the calories that many people are concerned about, but also the carbohydrate content and major nutrients that are truly important for diet control, for most of the ingredients and foods we enjoy eating on a regular basis, from grains and nuts to oils and sauces. It also introduces a variety of real dishes that are not only filling but also delicious with low carbohydrate content, providing practical help to readers who want to diet and manage their health through a carbohydrate-controlled diet.
Unlike the fat-centered diet methods that were popular in the past that did not distinguish between carbohydrates and sugars and underestimated the existence of dietary fiber, the ketogenic diet clearly distinguishes between carbohydrates, dietary fiber, and sugars, and aims to recognize and control excessive sugar intake rather than simply restricting or prohibiting carbohydrates. This can be said to be the differentiating advantage of the 'carbohydrate control diet' introduced in this book.
Obesity control and dieting can be said to be one of the most important tasks for modern people's health.
However, the number of people who are hurting their bodies and minds by dieting in the wrong way, or in excessive and painful ways, continues to increase.
However, I hope that in the future, many people will succeed in dieting by eating a healthy diet through the 『Carbohydrate Control Project』 and 『Carbohydrate Handbook』.
