Book Introduction
The author of 'Bagel Holic', the first book in the 'Holic Series', a recipe factory for maniacs, runs the popular baking class 'Jay's Secret Garden', where you can learn how to make trendy items in a way that tastes better than at a famous restaurant.
The author created his own special recipe by tasting bagels from the hottest bagel shops, testing their textures, and when he opened a class, students from all over the country and abroad flocked to learn his secret recipe.
This book contains all the content from the most popular bagel class.

We introduce a total of 17 bagels based on three textures: a chewy classic bagel close to the New York original, a soft and savory bagel with a wood-fired oven-like feel, and a soft and chewy bagel, and each with its own unique application.
You can learn about the differences in texture, taste, and size depending on the type and mix of flour, the presence or absence of folding, and the low-temperature maturation and pre-fermentation methods.
It is also possible to create your own bagel to suit your taste.

Once you've chosen your preferred bagel texture, creating countless variations isn't difficult.
The fillings and toppings used in the book can be applied to any bagel.
Here, you can find 17 kinds of spreads and sauces including homemade cream cheese, chocolate sauce, and bacon jam, 12 kinds of bagel sandwiches using spreads for snacks and meals, and an endless variety of side menus for bagels, including soups, bagel rusks, and croutons that go well with bagels.

Publisher's Review
“Master bagels with more flavor and variety of textures than those found at famous bagel restaurants with this book!”

Who could have predicted that bagels would become such a hit in Korea? Some bagel shops only offer them during their "opening run," and even online food stores sell six bagels for as high as 40,000 won, selling out quickly. Bagels remain incredibly popular.

Just 5-6 years ago, bagels were perceived as hard bread sold in bundles at large supermarkets, and were enjoyed only by a select few.
The status of bagels has completely changed.
One of the reasons bagels are so beloved in our country is the variety of textures they come in.
A bagel that suits our taste was created by adding a moist and soft texture to the hard bread and baking it in an oven like pizza to bring out the crispy texture.
As the range has diversified with fillings, toppings, spreads, and sandwiches, it has become a hot trend appearing on the social media of the MZ generation.

The author of "Bagel Holic," the first book in the "Holic Series," a recipe factory for maniacs, runs the popular baking class "Jay's Secret Garden," where you can learn how to make trendy items even more deliciously than at a famous restaurant.
The author created his own special recipe by sampling bagels from the hottest bagel shops, testing their textures, and when he opened his classes, students flocked from all over the country and abroad to learn his secrets.

Whether you want to make bagels that are even more delicious than those at a bagel restaurant at home, or you're a store manager looking to add a new bagel menu, the author has included the brands of ingredients he uses and recommends in his classes so that you can follow along and use them. I hope that this book will help you enjoy bagels in a more enjoyable and diverse way, and that you'll fall in love with the charm of bagels.

- Bagels have a simple flavor and chewy texture, making them great for sandwich bread.
First, apply a spread that matches the filling and fill it with the filling to create volume.
Wrapping it tightly in plastic wrap and then cutting it in half makes it easy to eat and filling.

* Use leftover bagels as rusks and croutons!
- Try making rusks or croutons with bagels that have become hard after a day or that you don't like.
The crispy texture and mild flavor make it perfect as a snack.
Garlic sauce is used in garlic fondant bagels, but it's also delicious in croutons.
Croutons are enjoyed as a topping on top of soup.
