“I wish vegetarianism was more familiar and more delicious…” “I wish temple food were easier…” The number of vegetarians in Korea has reached 2 million. Now, ‘vegan’ has gone beyond a trend and become a food culture. However, when people hear the word 'vegan', many still think of menus using foreign ingredients like chickpeas and avocados, and most vegan restaurants sell Western dishes like salads, pasta, and pizza. So, we need vegan Korean recipes that are friendly, tasty, and colorful for vegetarians. ‘Vegan Korean food’ literally means ‘Korean food made only with plant-based ingredients.’ Our representative vegetarian diet includes ‘temple food.’ Chef Jeong Jae-deok's 'Vegan Korean Cuisine' begins with temple food. Temple food is a little different from typical Korean, vegetarian food. We cook very simply, using only the minimum of seasoning and seasonal ingredients from our mountains and fields, but we do not use any of the five spices (green onions, garlic, chives, wild chives, and wild chives) that are known to disturb the peace of mind. That's why people who prefer temple food say it relaxes both their body and mind. Although temple food is known to be healthy, many people find it difficult to prepare it at home, from the ingredients to the recipes. So, in this book, we've chosen dishes that any vegetarian would enjoy while maintaining the principles of temple food, and we've introduced ways to make them easier and tastier using ingredients that can be found anywhere and seasonings you have at home. The author of this book is Chef Jeong Jae-deok, a temple food expert. He was a chef at a Korean restaurant in a 6-star hotel that everyone envied. He wanted to cook healthy and meaningful Korean food, not just fancy food. So in 2008, he quit his job and went to a temple to live there, where he learned temple cuisine from the great monk Daean. Afterwards, he worked as a head chef at the temple restaurant ‘Balwoo Gongyang’ and the Korean restaurant ‘Dadam’, and was selected as the youngest temple food master. In 2013, Chef Jeong Jae-deok published his first book, “Our Home’s Temple Food: How Vegetarian Food Becomes Delicious,” to popularize temple food. This book became a bestseller as soon as it was published and is still loved as an introduction to temple food, and has also been published overseas. Over the next 10 years, he steadily collected new temple food recipes and developed Korean menus for vegans. Now, for the growing number of vegetarians, he has prepared his second book, "Vegan Korean Food You Want to Make Every Day," which is much easier and more popular than his first book. He has spent a year and a half preparing it and has now released it to the world. This book, which contains the chef's know-how that has deepened even further, contains a total of 106 recipes ranging from everyday dishes such as rice and porridge that are enough even without side dishes, noodles and special dishes rich in the flavors of the four seasons, hearty one-dish meals to enjoy with loved ones, soups and side dishes that soothe tired body and mind, to versatile seasoning sauces, vegan healthy side dishes, and vegetable nutritious dishes for revitalizing energy. Because the book contains familiar yet new dishes made with common ingredients and basic seasonings, anyone can follow along the moment they open it.
