Publisher's Review
Introduction to the issue

In a broad sense, ramen is a food that is eaten with noodles in broth, and in Korea, instant food such as packaged ramen or cup ramen is called ramen, so ramen serves as a barometer that shows the diversity of food culture, especially in the Asian region.
Instant ramen, in particular, is considered the greatest invention in human history because it allows anyone to easily control the cooking process with just water, ramen, and fire, allowing them to enjoy ramen with the same taste.
Japan's ramen, known as the birthplace of ramen, has evolved into a representative regional delicacy by incorporating variations in the form of broth, while Korea's instant ramen is showing a trend of moving beyond convenience food and becoming a part of cooking through product development and recipe suggestions that quickly reflect consumer needs and dining-out trends.
